i realized that i havent been blogging alot lately…i think i am wiped out…seriously? (ha ha, greys anatomy)

no, i have just been really overwhelmed lately with my obligations…

i dont want to write a post and sound like im complaining…im not…i just realized i havent been blogging…and i think the reason behind that is that i just feel tired, overwhelmed, frustrated, and tired…

when i get like this, my motivation lacks, im in physical pain, and my attitude stinks…i know this about myself, and i really try not to let it get to a bad state, but sometimes, im just overwhelmed and it happens.. i hope anyone who  gets in this line of fire can forgive me!

please pray for overwhelmingness!  thanks guys!

last friday, bill, my papa-in-law and his mom (mamoo) stopped in for the evening before heading the rest of the way up to salinas for mamoo’s visit…

we had a nice time visiting…it was great to see them…bill is such a great son…he flew all the way to arizona, picked up his mom, drove half way to riverside, then all the way up to salinas…and then he is doing it all over again this weekend…i dont know about you, but that seems exhausting to me!  i think he is a great son for doing all that traveling!

anyway, we went to eat at PANERA…mamoo had never been there (gasp)…then came home and visited for a while…then next thing i knew, they we gone!

We went to see Cloverfield last thursday evening…jon, me, and heather…heard that it was suppose to be real shaky, possibly affecting your tummy and possible nausea…well, i have to say, i survived it without getting too queezy (is that how you spell that?) for me. this was monumental…i always get motion sickness, its quite ridiculous!

 anyway, it was a good movie…i guess now america has its monster!

so, i have been behind in bloggong so much lately…what the heck?

so much is going on, i guess its just been hard for me to sit down…and BLOG about it!

well, in the last week, i went to class, worked, and before i knew it, it was the weekend…woohoo

friday:  my folks came over for dinner and games (um, loaded questions adult version rocks!)…which we now own, since my parents dont want to play with their friends…its a game for the younger folk…

friday night/saturday…my niece spent the night and we went to the science discovery museum, lunch, and a play…

sunday: hung out while hubby went to his boss’s surprise birthday party…actually i did homework…then we went to the caffenated caberet at the coffee depot downtown…IT WAS RAD!!!!!  it will be a reaccuring event for us….third sunday of every month…730 pm…musical theatre lovers?  come out and play…

monday, holiday, had a great walking date with my dear friend les…walked 3 miles…whew!  then STARBUCKS!  then home, quick shower, and to the movies to see another dear friend whom i never see, kelsey…watched 27 dresses…cute, but not great…but james marsden was worth going for just to see his smile…man, he is cute!  then walked the mall abit, grabbed a great steal from bath and body works…two of my fav. scents are being discontinued…they always do that…so i stocked up…great deal, like 4 bucks for each thing…sale ends the 27th they said…everything else was only 5…i never goto the mall…so this was a rare but fun trip…

tuesday, another 3 mile walk with my friend les…home, hanging out, trip to tjs, and then class…which consisted of me sitting in on a rehearsal, envisioning as if it were a high school production that i was directing, etc…critiquing, analyzing, bla bla…it was really not that fun!  home..

and now i sit here at work…its lunch, i read the 37 blog posts i was behind on…and said, hey, what the heck?  im slackin…so here is what i have been up to…with no interesting pics…sorry…deal!

so, its been almost a week since i posted…

schoolwork has been keeping me busy, and then there is my free time i like to devote to my love…so i try to get all my homework done so that we can spend his free time together…so, update from last friday evening…

Friday night:  went t my nieces birthday party…yummy!

Saturday:  drove to Nee’s and spent the afternoon with them and mom for moms birthday contd. (since the boys hadnt celebrated with her yet, well, besides aedyn)…had fondue and rocklette…oh my goodness, i am never hungry when i leavemy sisters house!

Sunday:  returned home in the afternoon to attend Holly Rodrigo’s baby shower…fabulous, she was so adoarble!  Go green for Baby…great party theme Jess…

and this week, um work and school…nothing too exciting yet…looking forward to tomorrow evening…papa bear is coming over with my step-mama for dinner and games!  should be wonderful!

so, thats it folks…sorry for the scarcity!  but, um, nothing exciting happenin’ here!

So, today is my nieces birthday!  She is the big 11!

we are going over to her chinese buffet birthday party this evening…should be tasty!

uncle jon and i plan to take her next weekend for her present to the science discovery museum in the O.C.!  should be fantastic!

Today was my moms birthday…i picked her up, we went to STARBUCKS, then i took her to lunch at DISNEYLAND…we met my sissy and nephew there for a few hours…then i had to head home for class …

i love my mom…and i hope her birthday was all she hoped for…

well, today was my 2nd official day of my 2nd quarter of grad school….

man, this one class im taking, does not look like its going to be fun AT ALL!

okay, so i have made this soup several times in the past 5 months and its always a hit!

so, i am sharing the recipe…to be honest, i got the recipe from a lady making it at TJ’s…but i came home and seriously contemplated adjusting the recipe a bit to make it better…and whatever i did was good, cuz ya’ll love it…so here it is…

Kat’s Simple Chicken Enchilada Tortilla Soup

2-3 cans of chicken (big) in water

2 16oz. jars of green chile verde salsa

1 can of yellow corn

1 can of garbanzo beans (yes, garbanzo beans)

2 quarts of chicken broth (i use 2 of the quart size low sodium, organic from TJ’s)

2 cups shredded cheddar cheese or three cheese mexican blend

1/2 bag of organic yellow corn tortilla chips (also from TJ’s)

1/2 onion (chopped)

crushed red pepper for taste

salt/ pepper for taste

sour cream

more shredded cheese aside

sliced blackolives (optional)

tapatio (for flavor, optional)

Combine chicken, salsa verde, corn, garabanzo beans, broth, onion, salt, pepper, and crushed red pepper in a large pot on stove. Stir and bring to a boil. (i always test the onions to be sure) Turn off stove. Add about 10-12 handfuls or 1/2 bag of tortilla chips, crushed up. Stir into pot to thicken. Add cheese and stir until desired thickness. If needed, add more chips.

serve in bowl and sprinkle with more cheese if desired, add black olives, sour cream, tapatio (if you like it hot) and more chips to dip.

Voila! all in all prep time and cook time about 30- 4o minutes.

Serves um, alot…you will have leftovers, if not feeding like 10-12 people.

oh, and also, i get all the ingredients except for the olives and tapatio, from TJ’s…for those not savvy to the lingo, thats TRADER JOES, the best grocery store on the planet…i use their 3 cheese mexi-blend and their canned chicken rocks!
